Smarty Boy is homeschooling this year and so has found himself with extra time on his hands. Lucky for me, he likes to use some of that time to cook. So he’ll be a guest chef here on Brain Candy about once a month and share one of his yummy creations. Oh, and be prepared to see bacon on just about every ingredient list.

Bacon Pesto Pasta
Ingredients:
- 5 to 8 pieces cooked bacon, crumbled
- 4 to 6 oz. pesto/ small jar
- 12 oz. angel hair pasta
- 5 green onions, chopped
Cooking Instructions:
- Set oven to 350 degrees
- Lay bacon out on a baking pan
- Cook bacon for 8 to 10 minutes on the first side
- Drain the pan of bacon grease
- Cook bacon for 8 to 10 minutes on the second side then remove bacon and cool
- Begin cooking pasta and follow instructions on package
- Drain pasta
- Chop green onions very thin and sprinkle on top of pasta
- Crumble bacon on top of pasta
- Mix up the pasta and bacon and onions so that there are no clumps
- Spoon pesto onto pasta, mix again
