I’ve become a real Trader Joe’s fan since moving to California. For those of you with no TJ’s in your vicinity, sorry ‘bout that. The stores are tiny, but since they sell primarily their own brand, there’s no need for an entire cereal aisle. Regardless, I discover some new tidbit every time I shop.
One night, I got a little creative at dinner and made the following salad. Both my guys agreed it was worth eating again. A winner!
Kelsey’s Pull-It-Out-Your-A$$ian Salad
- 1 bag mixed salad greens
- 3 handfuls of whole wheat penne pasta (or other variety), cooked
- 1 can mandarin oranges, drained
- 1 package Trader Joe’s soy-ginger cod, cooked (I cook mine in a skillet)
- 1 handful of slivered almonds
- Some type of soy/ginger/Asian dressing
Boil pasta, and toss it in the fridge to cool. Might want to do this earlier in the day.
Cook cod on stovetop according to package directions. While fish is doing its thing, shake some salad greens into three bowls. Toss in the pre-cooked, cooled pasta. Drain the oranges and dump them on top. Sprinkle on some almonds.
Once fish is done, cut portions and flip those in the bowls too. Add dressing. If you’re feeling wild, you might sprinkle on some chopped green onions.
Serves three. Enjoy!
