Hola, BCB readers! We have a treat and a half today because I have finally browbeaten sweet-talked Tech Guy into sharing his fabulous migas breakfast recipe. If you haven’t had migas, well…you’ve missed out on some major gustatory fabulosity.
Needless to say, Tech Guy is fattening me up with this dish!
Ingredients:
- 1 white onion – chopped
- 2-3 fresh jalapeños – chopped (with seeds)
- 1 tablespoon butter
- 4 corn tortillas
- 4-5 eggs
- 1/2 cup milk
- 1 – 12 oz block of sharp or extra sharp cheddar cheese
- 1 avocado
- Pinch of salt
Optional:
- Flour tortillas
- Tortilla chips
- Hot salsa
- Trader Joe’s Applewood Smoked Bacon
In a bowl, whisk together eggs and milk. Salt and pepper eggs (as desired), then set aside.
In a medium skillet over medium heat, heat oil and fry each corn tortilla just until crisp. Remove to a paper towel-lined plate to drain. Chop tortillas and set aside.
In a large skillet over medium-high heat, melt the the butter. Add onions and half of the jalapeños and cook until onions look transparent, about 3 to 4 minutes.
Reduce heat to medium-low.
When the heat has decreased, pour egg mixture into skillet. Stir gently to cook, folding mixture very gently. Add in grated cheese and tortilla pieces, stirring gently to combine.
When cheese is melted, add remaining jalapeños if desired. Otherwise, serve remaining jalapeños as a side with black or pinto beans.
